Crémant de Loire
Blanc de blancs is a blend of Chardonnay and Chenin. This cuvée is made exclusively from the first juices run off from the press, the best ones for the sparkling process.
This crémant has benefited from an ageing period of 30 months "sur lattes". With very little dosage and particularly raw, this "tête de cuvée" is a rich and structured wine, to be drunk as an aperitif or with a meal.
Vinification Manual harvest in crates, then gentle pneumatic pressing (1.5 kg of grapes for 1 liter of must). Static settling for 48 hours. Alcoholic fermentation at low temperature (19°-20°) for 10 to 15 days. Maturing in vats on fine lees. No bentonite and no malolactic fermentation. The wine is matured in the cellar and stored on laths for at least 30 months.
