Touraine Chenonceaux
AOC Touraine Chenonceaux. A great white wine from the Loire Valley with a yellow color and a straw glint, made from old Sauvignon vines, with aromas of white flowers and ripe fruits (peach, apricot), with a nice minerality, to be served as an aperitif or with fish in sauce. To be cellared for 2 to 5 years, or more for great vintages. Serve chilled at 8 to 10°C.
Soil On the right bank of the Cher river, the vines are planted on sandy soils, thin, stony soils that drain excess humidity quickly. The subsoil is limestone.
Exposure Facing : South, south-east of the slopes on the Cher
Vinification Harvesting : Mechanical harvest, skin maceration of 15 to 18 hours on the whole harvest, then pneumatic pressing. Static settling for 48 hours, no yeasting. Alcoholic fermentation at low temperature (19°-20°) for 5 to 6 weeks. Aged in vats on fine lees until September, no malolactic fermentation.
